Filter coffee is not only a rediscovered trend, but also an art form that is celebrated with its own championship at the German Brewers Cup organized by the Specialty Coffee Association (SCA). At this year's Frankfurt Coffee Festival, this exciting competition will make the hearts of all coffee lovers beat faster.
The German Brewers Cup challenges baristas in two different disciplines: Compulsory Service and Open Service. Both disciplines have their own unique requirements and challenges.
In the Compulsory Service, all participants compete under absolutely the same conditions. They are given the same water and the same coffee, and their task is to achieve the best possible result for the jury. Only the choice of brewing method is left to the baristas to get the best out of the beans. The baristas have seven minutes to serve each of the three judges an individually brewed filter coffee. No elaborate presentations are expected in this round - only the quality of the brewed coffee counts here.
It is completely different in Open Service. Here, the baristas are completely free in their choice of coffee, water and all manual brewing utensils used. This freedom allows the participants to make full use of their creativity and expertise. The challenge is not only to brew the best coffee of all the participants, but also to present it in the best possible and most appropriate way. The baristas must convince the jury with background information on the beans used, excellent hosting qualities and a precise description of the taste. Aroma, finish, body and texture, acidity, sweetness and bitterness, balance and the overall impression of the brewed coffee play a decisive role.
The jury's assessment of the Compulsory and Open Service results in an overall score. If a final is held due to the high number of participants, the participants present their Open Service again. The final result is then added to the result of the Compulsory Service from the first round to give an overall result. The participant with the highest score becomes the German Brewers Cup Champion and represents Germany at the SCA World Brewers Cup.
